4 Ingredient Chocolate Chia Pudding

Chia puddings are really popular at the moment, with a lot of people trying to eat more healthily. For us mums caring for children with food allergies, chia puddings are fantastic! They are healthy, allergy friendly, quick, easy to make.... and delicious!!


Last night, my daughter had a sleepover so the request was made for chia pudding for dessert. This is a really easy recipe and perfect for the kids to help with...or make themselves...

My daughters gorgeous little friend made my day yesterday. When my kids told her we were having Chocolate Chia Pudding for dessert, she initially looked sad and said "I guess I'll have to miss out, because I'm trying to be more healthy. I was thrilled to watch her sad little face light up when I told her that this was a healthy chocolate pudding and she would be healthier if she did eat it rather than not have it. She loved it and actually licked her bowl clean.

There are many different variations to chia pudding, this is just what we had last night....

Ingredients

1-2 Tablespoons Raw local honey (helps to build an immunity if you have pollen allergies)
4 Tablespoons Chia seeds
2 cups Rice milk
2 teaspoons Raw Cacao powder

What you'll need...

Method

Place honey into a medium sized mixing bowl. Add about half a cup of the rice milk and stir until combined.
Thin out the honey with some of the milk



Stir in the chia seeds and mix until combined.

Leave for about 15 minutes until mixture takes the form of a gel like consistency.

Sift cacao powder into gel mixture and stir until the cacao is mixed through.


Sift the cacao powder into the mix


Add remaining rice milk and stir (with a metal whisk) until combined.


A good cook always tastes the food...

Pour into ramekins or serving bowls. Refrigerate for 3-4 hours or overnight if you wanted to have for breakfast. Enjoy!


Gluten free allergy friendly chocolate chia pudding




 Notes
I use raw cacao powder, because of its nutritional content. You could replace it with cocoa powder if you prefer.
You could also replace the cacao with Chocolate *Darifree for added calcium especially for those with a dairy allergy.
